ERG3甾醇-C5-去飽和酶(英語:Sterol C5-desaturase)是真菌釀酒酵母Saccharomyces cerevisiae)的涉及麥角固醇生物合成的一種,與人類基因組中的CS5D同源[1],可定位於內質網囊泡[2][3],催化表甾醇的C5(6)脫氫形成雙鍵變為5-脫氫表甾醇,5-脫氫表甾醇之後經歷ERG5ERG4等多個酶的轉化最終變為麥角固醇[4][5]
