創立

前百事公司營銷主管亞倫·甘迺迪（Aaron Kennedy）在紐約格林尼治村的Mamie's Asian Noodle Shop用餐後，萌生了創立供應麵食的餐廳的想法。[7][8]其發覺全球範圍內許多地方以麵食為主食，但在美國缺少以供應麵食為主的餐廳。[8][9]1994年，甘迺迪等人開始在其岳母的廚房中開發食譜。[10]甘迺迪從朋友和家人那裡籌集了7.2萬美元，外加20萬美元的投資資金，於1995年10月在科羅拉多州丹佛櫻桃溪（英語：Cherry Creek, Denver）開設了首家餐廳。[11][12][7][12][13][14]次年3月在威斯康星州麥迪遜開設了第二家餐廳。[7][12][15]
